Mint and yogurt sauce for lamb

This mint and yogurt sauce for lamb adds a tangy contrast to rich lamb dishes. Fresh and creamy, it comes together with just a handful of simple ingredients and takes only a few minutes to prepare.

Ingredients

  • 1 cup Greek yogurt
  • ½ cup Mint finely chopped
  • 2 tablespoon Lemon juice approx. half a lemon
  • 1 teaspoon Garlic minced
  • Salt to taste
  • Pepper to taste

Instructions

  • In a bowl, combine the yogurt, mint, lemon juice and garlic, and mix well.
  • Season with salt and pepper to taste.
  • Cover and refrigerate for at least 30 minutes, or until you're ready to serve. This gives the mint, garlic and lemon time to infuse the yogurt with flavour.

Notes

  • Leftover sauce can be stored in an air-tight container in the refrigerator for up to 2-3 days.
  • Save time and washing up by squeezing the juice of half a lemon directly into the mixing bowl, using a clean hand as a strainer to catch the seeds.
  • Use fresh mint where possible. Fresh mint gives the sauce a much brighter flavour than dried mint.
  • If you have enough time, preparing the sauce a little in advance allows the flavours to fully develop.
