How to make Mint and Yogurt Sauce for Lamb

Step 1: In a bowl combine the yogurt, mint, lemon juice and garlic, and mix well.

Step 2: Season with salt and pepper to taste. Mix well.
Step 3: Cover and refrigerate for at least 30 minutes, or until you're ready to serve. This gives the mint, garlic and lemon time to infuse the yogurt with flavour.
Storage
Leftover sauce can be stored in an air-tight container in the refrigerator for up to 2-3 days.
Tips
- Save time and washing up by squeezing the juice of half a lemon directly into the mixing bowl, using a clean hand as a strainer to catch the seeds.
- Use fresh mint where possible. Fresh mint gives the sauce a much brighter flavour than dried mint.
- If you have enough time, preparing the sauce a little in advance allows the flavours to fully develop.
