In this blog I'm sharing my favourite recipe for air fryer crumbed lamb cutlets that are crunchy on the outside and irresistibly tender within. Cooked in under 20 minutes these lamb cutlets make a healthy and delicious alternative to deep frying with seed oils.

Crumbed protein of any kind, but especially lamb cutlets, is one of my favourite go-to recipes when dinners start to become a little boring and I want to change things up.
Crumbing (breading) is also one of those great mum hacks you can use to tempt your kids into trying something new.
This recipe was inspired by my popular marinated lamb cutlets, and works brilliantly in the air fryer with the outside becoming really crunchy, while the lamb remains tender and juicy on the inside.
A simple sauce made from mint, yogurt and lemon takes this dish to the next level.

- Extra virgin olive oil
- Lamb cutlets
- Egg
- Milk
- Breadcrumbs
- Plain flour (all-purpose flour)

Ingredient notes
When possible I always opt for pasture-raised lamb, eggs and milk and use organic extra virgin olive oil.
Homemade bread crumbs made from left over bread are easy to make. Simply remove the crusts, dry the bread in the oven on the lowest setting, and blitz it in a food processor. Otherwise normal breadcrumbs from the grocery store are great for affordability and convenience.
Stocking your kitchen with a local unadulterated salt (such as Australian sea salt) is a must for home cooks. Unlike convenience and takeaway foods, you don't need to worry about adding too much salt to your home cooking because when you cook from scratch you know exactly how much you're using.
Instructions
Spray the air fryer basket with olive oil.
In a small bowl, combine the egg and milk and whisk well. Place the breadcrumbs into another bowl. In a third bowl, combine the flour, salt and pepper.
Coat the lamb cutlets with the flour mixture first, shaking off any access. Then dip the lamb into the egg mixture, and finally the breadcrumbs, pressing firmly.
Lay the lamb cutlets in the basket in a single layer then spray the crumbed lamb cutlets generously with olive oil.
Hint: I recommend getting one of these very inexpensive yet super handy refillable oil sprayers.
Set the temperature to 200°C (400°F) and time to 18 minutes then commence cooking.
Meanwhile create a simple sauce to serve with the lamb by combining chopped mint, yogurt and lemon juice in a small bowl.
Flip the lamb halfway through cooking and spray the other side with olive oil.
Continue cooking. Check for doneness and adjust remaining cooking time if required.
Hint: If you have a meat thermometer you can use the following chart to check how well cooked the lamb is.

- 600 grams lamb cutlets approx. 6-8 cutlets, trimmed/frenched
- 1 egg
- 1 cup milk
- 2 cups breadcrumbs
- ⅓ cup plain/all-purpose flour
- salt and pepper to taste
- 1 tablespoon rosemary finally diced
Mint and Yoghurt Sauce (optional)
- ½ cup yoghurt
- ½ cup mint
- ½ lemon

Top Tip
If you have kids, get them involved in the kitchen by encouraging them to help crumb the lamb cutlets. It's a great way for them to be involved in cooking without using heat or sharp knifes.

In the air fryer of course! Once you have the prep work done, you can simply set and forget, while the air fryer cooks your lamb cutlets to perfection. Crumbing (breading) lamb cutlets is a quick and tasty way to prepare lamb cutlets for air fryer cooking.
Yes you can, but in my experience there is more mess to clean and you risk burning the crumbs on the grill. That's why I recommend cooking them in the air fryer.
