- 1 onion
- 2 apples cooking variety eg. Granny Smith
- 2 tablespoon butter
- 1 teaspoon curry powder
- 3 teaspoon plain flour
- 1.5 cups milk
- pinch salt
- 550 grams sausages
- 1 cup frozen peas
- 8 eggs
- rice to serve
Peel and dice the apples and onion. Cook and slice the sausages. Cook, peel and slice the eggs.
Add the butter to the pan and melt over medium heat.
Add the onion and apple and sauté over medium heat until soft. Stir in the curry powder and flour. Cook for 1 minute until fragrant.
Add the milk, mix well and bring the sauce to a simmer, scraping up any browned bits from the bottom of the saucepan.
Add the sliced sausages and peas and simmer for another 5–10 minutes until the sauce thickens and everything is heated through.
Add the sliced boiled eggs and gently stir through just before serving.
Serve with rice.
