Old fashioned curried eggs and sausages made with traditional curry powder and apple is a simple, budget-friendly meal that comes together quickly with pantry staples, yet feels hearty and satisfying. This heirloom recipe was passed down from my father to me. It's an adaption of the original recipe 'Curried Eggs' which featured in a vintage edition of the Bundaberg Branch Country Women's Association Cookery Book.

This recipe is one of those "midweek miracles"-easy to make, budget-friendly, and deeply satisfying. Whether you're feeding little ones, prepping ahead, or just want something cosy in a bowl, curried sausages and eggs ticks all the boxes.
Ingredients

- Brown onion
- Cooking apples - I use the Granny Smith variety
- Beef sausages, sometimes known as 'link sausages'
- Eggs
- Butter
- Curry powder - I use Keens Traditional Curry Power which is a mix of turmeric, coriander, fenugreek, black pepper, chilli, allspice, and celery.
- All-purpose/plain flour
- Milk
- Salt
- Frozen peas
- Rice, to serve.

Instructions


Step 1: Peel and dice the apples and onion.
Step 2: Cook and slice the sausages (I like to use the air fryer to cook sausages).


Step 3: Cook, peel and slice the eggs into quarters.
Step 4: Add the butter to the pan and melt over medium heat.


Step 5: Add the onion and apple and sauté over medium heat until soft. Stir in the curry powder and flour. Cook for 1 minute until fragrant.
Step 6: Add the milk and bring the mixture to a simmer, scraping up any browned bits from the bottom of the pan.


Step 7: Add the sliced sausages and peas and simmer for another 5-10 minutes until the sauce thickens and everything is heated through.
Step 8: Add the sliced boiled eggs and gently stir through the curry sauce just before serving.
Step 9: Serve with rice.

Top Tip
Cook the sausages and eggs the day before to make preparing this recipe quick and easy.
Storage
Leftovers can be stored in an air-tight container in the refrigerator for 3 days or frozen for 3 months. Although safe after 3 months, frozen leftovers can lose moisture and flavour when stored for longer.

- 3 teaspoon plain (all purpose) flour
- 1.5 cups milk
- pinch salt
- 550 grams sausages
- 1 cup frozen peas
- 8 eggs
- rice to serve
Instructions
